The Opificio di Giuso finds its origins in a fascinating past. Built in the 15th century, the place was an underground oil mill, a place where olives were processed to obtain oil. The evidence of this past is anchored in the niches that once housed the millstones for pressing the olives and in the mangers that fed the draft animals used in the activity.
One of the most distinctive elements of our venue is the majestic central beam on which the
millstone, a tangible symbol of the industriousness that animated this ancient workshop. Over the centuries, L'Opificio di Giuso has undergone a process of evolution, expanding to embrace today's configuration. The original niches and stone vaults that characterize the structure have been diligently preserved, offering guests a window onto time.
A detail that attracts the attention of visitors is
a stone engraving, dated 1786, located on the original entrance, in today's Via Paolo
Chirulli. There is a phrase taken from an epistle by Horace at
Consul Numicius: "Quidquid sub terra est, in apricum proferet
aetas,” which roughly translates to: “What is under the earth will come to light in its due time.”
